Sugat syrup ingredients:
1 1/2 cups water
4 cups white sugar
2-3 tbsp calamansi juice
Cornstarch paste:
2 cups water
1 cup cornstarch
1 tsp cream of tartar
flavor and color:
1 tbsp vanilla extract
2 drops red food color
Coating:
1/2 cup powdered sugar(more if needed)
1/2 cup cornstarch(more if needed)
Procedure:
1) In a pot combine water, white sugar and calamansi juice
2) Turn the heat on and stir until sugar dissolves
3) Bring to a boil. Continue boiling over med. low heat for 10min. and continue stirring
4) In a separate pot combine water, cornstarch and cream of tartar
5) Mix well until no lumps
6) Turn the heat on and keep stirring until it becomes a thick paste
7) Gradually add sugar syrup into the paste and mix after each addition
8) Reduce heat to low and simmer mixture for 1hr.& 15min. Stir mixture frequently
9) Turn the heat off and add vanilla extract and red food color
10)Pour mixture onto the greased mold and dust the surface part of turkish delight
11)Let it set up for 5hr. or overnight
12)Coating: combine powdered sugar and cornstarch
13)Dust counter top with powdered sugar-cornstarch
14)Loosen the edges and flip it onto the counter top
15)Peel the parchment paper of
16)Add more powdered sugar-cornstarch and Cut it into small cubes
17)Dredge cubes into the powdered sugar-cornstarch and place it inside an airtight container
